One great thing I am returning to is cooking my own meals. Gone are the days of catered lunches at my old office.. With lunch time meals I also try to use the KISS method as it cuts down the dishes I need to clean during the day. Having fun with ingredients is always an option but sometimes simple is simply the best.
Pizza Mini Portuguese Igrediants
Nana pita bread
Olive oil or sundried tomato oil
Portuguese chorizo
Tomato sauce (homemade or canned)
L`ancetre old Cheddar sliced (lactose free)
Chopped oregano leaves
Assembling this dish is pretty simple if you`ve seen a pizza before yet here is some little tricks I try to enhance the experience.
1. Drizzle the oil on the edges of the bread - the oil will heat up fast and cook the edges sooner than the saucy parts giving it a bit of crunch difference then the centre.
2. A Portuguese twist on the tomato sauce has family secret recipe with key ingredients such as chillies, onions, garlic, parsley which has been prepared and fermented in a mason jar in a perfect combination to provide a more wow tomato sauce. Try your own or mail me for tips.
3. Two kinds of shredding to the cheese. I find that the smaller shred does the melt and hold factor you’re looking for & the bigger pieces provid the cheese taste and melt nicely over a chorizo for a great bite. Oh I am lactose intolerant hence the cheese selection.
